Dear All,
Alexandrina Cheese Company is a place where winter sings
its own tune of freshness.
Take a breath of fresh air this winter when you step out
of the car at Alexandrina Cheese Company. This awarding winning tourism
attraction is at its best in the winter-time, with jersey cows close by
munching on pastures of green grass, and hand made hard style cheeses
are being turned inside the maturation room.
Winter is a time where the whole of the Fleurieu
Peninsula comes alive again. This is one of the busiest times of the
year for farmers and producers alike. It also is a great time to don
the winter woolies, including scarves and beanies for the trip to old,
cool and blustery Mt Jagged, where the value adding farm is located,
just 8 km south of Mt Compass. The family has been dairy farming at
this location since 1973, and the cheese making tradition goes back
over 107 years in Australia.
Locals are reporting it is the loveliest of
winter-seasons for many years. The fields are just bursting with green
grass, from when new clover and rye grass was sowed by farmer Dan
McCaul in Autumn, and preparations are being made for the start of the
new season.
You may notice as soon as you enter the Alexandrina
Cheese farm gate that there is a different, more energetic step to the
people, as they greet the warmth and brightness of the sun with the
season of Spring close on hand. Hence, they know that Winter is a
glorious time for man and beast alike. Not only for the visitor, but to
see all homes & kitchens serving warm soups, stews and puddings
topped with luxury dairy products such as Pure Jersey Cream and Crème
Fraiche. Moreover, we would all agree the best part of winter is being
able to cuddle up near the fire with a locally made cheese platter and
a glass of locally pressed fortified wine. With pleasures such as
these, we all know that Winter is the best time of all!
When visiting Alexandrina Cheese, Blue-Bell the large
metal cow will give you a friendly wave as you enter the farm gate
retail shop. Watch out for the tasty morsels that will greet you at the
tutored tasting bench, and smell the hint of fresh coffee from the
espresso machine and home-style baked ricotta cheesecake offered by
friendly staff. Locals flock in droves for the infamous
“Alexandrinashire Tea”, often served with a standard Jersey milkshake.
Visitors enjoy milkshakes the traditional way, with adequate amounts of
Jersey milk froth on top in an old fashion glass.
Make sure you cut out voucher attached to this enews.
The reward will be for you and a friend to enjoy a free “Standard
Jersey Milkshake” when you purchase another “Standard Jersey
Milkshake”. A great time to visit is during school holidays,
Alexandrina Cheese Company is open every day. Opening hours are on
Weekdays from 12-5pm, and Weekends from 10am to 4:30pm. We look forward
to seeing you at Alexandrina Cheese Company to sing your own tune of
freshness during July.

Read
all about it!
Thanks
to Christine McCabe for the lovely article featured in The Weekend Australian, 11 & 12th April 2009.
Jersey
milk an udder delight was a lovely article, probably the best we have
read about our business, so far.
McCabe
writes,
“Third-generation
cheese maker McCaul, who learned the craft from his father, leads a
family team, wife Krystyna (keeper of the family records; she names
every cow to keep track of genetic lines) and daughter Rebekah. budding
cheese maker and enthusiastic company ambassador, at this hilltop dairy
near Mt Jagged. located near the coast and one of the coldest and
wettest parts of South Australia.”
“Crucial
to the company's success is McCaul's intimate knowledge of each cow and
her particular qualities. ‘Unfortunately given the nature of our work I
tend to recognise them best by their udders rather than their faces,’
Dan quips.” Read

March 2009. At Alexandrina Cheese Company, we accepted a request from
the Office of the Governor of South Australia His Excellency Kevin
Scarce, for a visit in March 2009. His Excellency Kevin Scarce and his
wife Liz proved to be absolutely charming guests and fans of
Alexandrina Cheese already, with a few wedges of Cheddar destined for

Cheese
of the Season –
Mt Magnificent Gouda
We present our buttery full cream Jersey milk Gouda which
has deeply set round eyes. We meticulously adhere to old handmade
methods of cheese making to produce our Gouda. The cheese is made in an
open vat using a traditional step during production, where the curds
are pressed under the whey.
“Right now, our Gouda is at its best, we are looking at
a very creamy, 6-9mth old gouda, beautiful matched with a crisp white
wine from any region!” Rebekah exclaims. |
 |
During the 6 - 9 month maturing process this process
allows the cheese to develop with a scattering of small and shiny holes
known as eyes. As time passes, we watch the taste intensify and become
more complex. Our Gouda has a warm golden colour, with a delightful
firm, smooth and supple texture, providing clean slicing. It has a
pleasing nose and a rewarding flavour profile. A sweet and earthy
flavour adds depth of taste and aroma to the palate.
Silver Award - 2008 South Australian Dairy Awards -
Silver – Mt Magnificent Gouda (93.5 points) Class 7.
Also - I've always wanted to know the authentic Dutch
pronunciation of "Gouda", many say that it would it sound like
"how-duh" or "who-duh" to an English speaker? We can confirm the
correct pronunciation in the next Curds and Whey Enews! |
