SPRING has sprung and summer has arrived. DURING the months of spring, Dad (Dan McCaul) was thrilled to have grown more than enough green grass to feed the 85 cows in the Jersey herd. We have had a brilliant season, with rain falling widely across the Fleurieu Peninsula, South Australia. In May, it all started with seeding our permanent pasture, with rye grass. The long, lush days of spring arrived after a beautiful, soaking wet winter. Finally, at the end of October it was finally time to cut the grass, rake it up and bail it into round bales. Make hay while the sun shines… ONCE the bales are made, then it is time to wrap the bales with plastic to make the highly nutritious silage. You may ask – wrapping bales?, Why is this important to a dairy farmer? Well, silage is the answer, SILAGE! If you are new to silage it is beautiful fodder. Our silage is fermented, high-moisture pasture or fodder that can be fed to cud-chewing animals (like cattle and sheep). It smells like a fresh, aromatic bunch of cut grass, with a slightly pickled flavour! Strike when the iron is hot…. SILAGE is the most nutritious and delicious feed we have available for the herd in the summer and autumn. The better quality silage, the more milk the cow will be able to produce. Hence, autumn cheese making will create hard cheeses with full flavours being developed in the maturing process. Get while the gettin' is good… IT has been an absolute pleasure to watch the season unfold, with some of the best rainfall events to hit the Fleurieu Peninsula in over five years. We know that we are all hoping for a short summer season, with a few good rainfall events, and 2010 will look like another promising year in the world of agriculture. The lesson is to act while conditions are favorable… The seasons ahead… WE are however, faced with as many opportunities and challenges as ever. While we all make adjustments to climate variation, global economics, input costs, we keep a positive mind frame. The Alexandrina Team are committed and dedicated to making products with distinction, quality and excellence well into the next decade. The Dairy Industry Association of Australia (DIAA) and South Australian Dairy Association (SADA) have again recognised Dan and Krystyna McCaul of Alexandrina Cheese Company with a host of awards at the South Australian Dairy Awards held on 14 August 2009. A Champion trophy, plus two gold and three silver medals were distributed amongst the array of products entered. “We enjoy producing cheese that is consistently recognised for its superior quality and taste, and the entire Alexandrina Cheese team deserves recognition for once again turning out quality, award-winning products” Krystyna McCaul remarks. All of the products receiving recognition were awarded 93 points or over, once again indicative of the consistent quality of product coming out of the Alexandrina Cheese operation. Congratulations to National Foods, Moo Premium Yoghurt, Golden North and Swiss Glory Gourmet for their outstanding achievements winning Champion product trophies.

Yvonne and Fleur share a testimonial from two customers who love our Pure Jersey Cream. “Devon, the home of Devonshire teas and clotted cream has been trumped by Alexandrina Cream and Inman River Café Scones. Two customers of the Inman River Café who have recently returned from Devon reported they did not find cream or scones to compare anywhere in Devon itself! One was a born and bred Devon man who said he had not tasted cream like Alexandrina’s since his mother used to skim it off the pans of Jersey milk when he was a child” Yvonne quotes. I must admit, The Australasian1858 experience awaits for our family. But, the summer menu might be just the motivation we need to head down for our first Summer Saturday Dining experience. Our Fleurieu Feta in bring will be featured as an Alexandrina Feta, Tomato & Prawn salad dressed with a spicy Asian sauce. This newly opened guest house and restaurant has been the most talked about renovation job in the Fleurieu Peninsula. Has anyone seen the amazing residence lately? It is a tribute to both Juliet and Deb, and the team, and it augers well for the future.
Be sure to make an effort to book in for a Summer Saturday Dining experience. Dining begins in December with a 7pm pre dinner glass of Sparkling (with Asian Tapas) in the foyer and deck.
The $65 December Saturday menu is attached. The January menu is yet to be finalised…however Chef Juliet is thinking of doing "Sake Cockles" somewhere in that menu. An aside: Houseguests can dine on any night of their stay and, by arrangement with Juliet, houseguests can invite friends to join them for dinner. One last thing - The Australasian's Postcards segment is scheduled for 5:30pm Sunday 15th November, Channel 9.

Mark Przibilla & Rebekah McCaul’s wedding ceremony was held on Saturday 1st August 2009 at 3:30pm, in Stubbs Waterhole at Arkaroola Wilderness Sanctuary, in the magnificent Gammon Ranges, South Australia.
A special thanks to our close family and friends who made the nine and a half our journey to Arkaroola … Cathe Manowski, Crystelle McCaul, Judy Przibilla, Dan and Krystyna McCaul, Paul Przibilla and Linda Lablack, Steve McCaul and Danielle Cadzow, Geoffrey McCaul, and the beautiful flowergirls Ella and Clara Przibilla. The couple have settled on the Alexandrina dairy farm in the heart of Mt Jagged, south of Mt Compass.

With school holidays just around the corner, we thought we would ask Grant Schooling of The Gilbert Hotel to share his best Kid’s Corner recipe: Alexandrina Mushroom and Fresh Cheese Curd Tartlets. Fresh Cheddar Curd
FRESH CHEDDAR CURD is perfect for a summer platter, matched with an ale or local wine of choice. Fresh Cheddar Curd is simply a fresh curd of the Cheddar cheese. It is made in an open vat using traditional Cheddaring techniques. The Cheddar Curd is stretched, milled and salted before being hooped for pressing. It has a pleasant mild and savoury flavour, with a unique squeaky texture. It is interesting to eat as it has a gleaming texture and a wonderful flavor profile promoting the traditional use of the starter cultures and rennet which have been used in the cheese making process. Use the Fresh Cheddar Curd by placing it on a cheese plate or antipasto plate. The packet is a useful addition to any picnic or as a lunch item. It is best eaten it straight from the packet with fresh bread, crackers and fruit or with a glass of cider. If you haven’t tried Alexandrina curd yet, then get in your car and drive to the farm, immediately! Available in 250 gm and 500 gm bags.

5 Minutes with Chelsea: As a beloved Retail Team Member, Chelsea is a favourite with customers, visitors, children and staff alike.
In this photograph, we see Chelsea relaxing after a long day at the Jazz with Janet, and the Jerseys Concert in 2008. How long have you been at Alexandrina Cheese Company? This is my 4th year at The Cheesery. What do you like best about working at Alexandrina Cheese Company? Friendly atmosphere, friendly staff and customers, and I like helping to promote good local products and family owned businesses. What is your all time favourite Alexandrina product (hard cheese or luxury dairy product)? Most definitely the curd cheese, I put it in everything!! I hear the coffee is good at Alexandrina, but the real question is… Which full cream jersey milkshake flavour do you desire? I have a secret recipe that I have only shared with a few people vanilla, milo & malt!!
5 Minutes with Chloe: As an enthusiastic Retail Team Member, Chloe has really made her mark at Alexandrina Cheese Company, and she is consistently remembered by all her regular customers and a fabulous team member. In this photograph, we see Chloe frothing Alexandrina milk at the espresso machine, and really living life to the full in 2009. How long have you been at Alexandrina Cheese Company? I have been working at Alexandrina Cheese for just over 2 years, I love it! What do you like best about working at Alexandrina Cheese Company? I think the people are the very best part; both with who I work with and for, but also I get to meet so many interesting people who come to visit us. It's a very nice environment to work in too, who wouldn't like to work in a cafe and stare into the green pastures of the family farm out the front window!? What is your all time favourite Alexandrina product (hard cheese or luxury dairy product)? Oh, this is a hard one; I suppose I would have to say the Edam or the Mt Jagged Mature Cheddar; or maybe the Herb Marinated Feta! I love all of them! I hear the coffee is good at Alexandrina, but the real question is… Which full cream jersey milkshake flavour do you desire? The new flavour! Butterscotch; I had it for the first time today, yum yum!! I highly recommend it!
